It’s Friday! *
* I don’t typically post on Fridays. Normally you’d see this post next Monday or Tuesday. However, next week I’ll be soaking up the awesomeness that is vacation so I decided to post today. Now I could’ve scheduled this post to appear next week, but I wanted to celebrate Friday with you. #friyay 😎
I love Fridays.
I love Fridays. Always have. For me, Friday represents the promise of the weekend: sleeping in, lazy mornings with a cup of coffee, a movie night with pizza, having friends over for spaghetti or a games night (or both), and more…
Now let’s be real. Weekends aren’t 100% chill time. Let’s not forget about errands and chores. And cheerleading competitions…
Both of my daughters are cheerleaders. (Fair warning: You’re likely to be subjected to a future post (or two or three…) about cheerleading. #sorrynotsorry 😜)
Even though many of my weekend are jam-packed with errands, chores, and other commitments, I still love Fridays.
Wanna know what else I love?
Tomato soup with grilled cheese. And despite the fact it’s a bajillion degrees outside, that’s exactly what I wanted for lunch.
I mean, seriously, what’s not to love?? It’s the ultimate comfort food.
A bowl of steaming tomato soup with an ooey-gooey grilled cheese reminds me of my childhood. I love the simplicity of it. Nearly anyone can heat up some soup and put together a grilled cheese.
Anyway, as I was reaching for the can of tomato soup, I spied a can of tomatoes and remembered I wanted to make homemade tomato soup. One day.
As I quickly debated in my head whether I wanted to wait that long for my soup (it takes 40-50 min to make), I decided today would be “one day”. I’m so glad I did. It was super easy to make, and oh so good. This the recipe I used: https://www.inspiredtaste.net/27956/easy-tomato-soup-recipe/
Give it a try. I promise you won’t be disappointed.
Now on to you. What’s your favourite day of the week? What’s your favourite comfort food? Let me and others know by sharing in the comments below. And if you have some kickass comfort food recipes, share those too!
